As we all know, extra virgin olive oil (EVOO) can be used to elevate the taste profile and nutritional content of any dish. It can be used for cooking but also as the final healthy gourmet touch to your meals.


Now, If you have ever tasted really good Extra Virgin Olive Oil (EVOO) you will certainly have noticed something of a peppery sting at the back of your throat. If you didn’t know what it was, you might even complain about it. That would be to miss the point that what you are tasting is absolutely packed with health and beneficial compounds. In fact, knowledgeable olive oil connoisseurs look for that hit as proof that it has true quality.



However, finding the right oil to match a certain food can sometimes be a little tricky.


We don’t want to match a delicate EVOO with something substantial like barbecued meat, as the strong taste of meat might diminish the subtle flavours of the oil. While pairing a bolder-flavoured oil with fish might overwhelm the freshness of the fish.

Now, this is not to say that we need to be kiasu or kiasi about which kind of EVOO we use for every dish. All Timperio's EVOOs can be paired with any dish.
